there goes Easter

Every year Easter sneaks up on me, and just as quickly, it runs away again. Most years (this included) I leave it far too late to buy choccy eggs, when I finally go to buy some, they're sold out!

When it came to making lunch, I tried to keep it simple and spring like, even though the weather has been anything but lately. I hope the table looked pretty but casual, that was my intention.
The Girl is keen on helping me in the kitchen, and while sometimes it would be easier for me to be left alone to get on, I would never discourage her from getting involved. And, for anyone with fussy food children, try getting them to help make things that they wouldn't normally eat, it's a pretty good way of making them want to eat it.
My Girl is currently loving salad, and wants to make her own. Fine by me! We have taken a Pinterest idea and started making our salads in a jar, so they are fresh and ready in the fridge whenever we want them. A brilliant idea!

Butter for the rolls squished into small cake cases and topped with a sprig of thyme.
Pudding was taken from a recipe that I found on a rather lovely website. So easy to do. I adapted it slightly by leaving out the marshmallow on top. It might not have looked as pretty as I hoped, but it tasted pretty fabulous. Something I know I will make again.

Leftover chicken and new potatoes were chopped and placed in a jar with other salad ingredients to eat later on. Salad in a jar. I just love that idea!
