Do you make packed lunches for your other half, family, or yourself? I make my husband a packed lunch every day, and like to include homemade cake now and then. A few weeks ago I bought some of those mini loaf cases. I couldn't wait to try them out.
whenever I make Victoria sponge cake, I use the same recipe. It's from Susannah Blake's book 'Afternoon Tea': 180g butter at room temp, 180g caster sugar, 180g self-raising flour, 3 eggs. Beat butter & sugar until pale & fluffy, then beat in eggs one at a time. Add sifted flour and combine. I always add a dash of vanilla extract too.

I didn't want to make a large batch of the cake mix for the mini loaf cases, so I halved the amount (apart from the eggs, I used two. Life is too short to try and cut an egg in half!)
It worked out well. Half the cake mix recipe makes 5 mini cakes.
Once cooked and cooled, I removed cake from cases, sliced in half, and filled with either jam or lemon curd, then finished off with a light dusting of icing sugar.

This is why I think this style of cake is better for a packed lunch. Fairy cakes and slices of cake tend to get a bit squished in transit. I took fresh cases, then placed in a rectangle of greaseproof paper and folded over the top. This makes it easy to get the cake out of the case.
Then I cut more greaseproof paper and wrapped parcel style around the cake, and tied with a bow.
Not only does it look pretty, but it keeps the cake nice and fresh and easy to pack in a lunch.
I like to think that it will make my husband smile today, when he opens his little cake parcel. A little cake, made and wrapped with love.I had the last one with my cup of afternoon tea, it felt like quite a treat to unwrap a little homemade cake!
